Fitzroy was planned in 1839 as Melbourne's very first suburb — a dense, scrappy, working-class grid that grew into the city's bohemian heart. When Italian and Greek families arrived after the war, they brought espresso with them, and the little bars they opened along Brunswick and Gertrude Streets lit the spark for Melbourne's coffee obsession. We roast a few doors down from where it all started.
Maple & Ash started as a two-person cart at the Rose St Market. Nine years on we roast every bean in-house on a little Probat in the back corner — you can usually smell it from the footpath.
We work directly with growers in Ethiopia and Colombia, pay above Fairtrade, and keep the menu small so it stays honest. Come for the coffee, stay for the courtyard.
